Raiatea In The Kitchen: She Cooks, Too!

When Raiatea Helm visited the Cooking Hawaiian Style kitchen, she showed us that she is the complete package: She sings and cooks! I have been friends with Raiatea for a long time, but only knew she loved to sing … and oh, yeah, guys, she golfs, too!

We also learned her family owns a taro farm on Molokai. Her chicken luau stew is on today’s menu, using luau leaves from her parents’ farm.

Go cook some rice, cut some onions with Hawaiian salt and get the stew going!

RAIATEA HELM’S CHICKEN LUAU STEW

* 1 quart cooked luau leaves
* 6 boneless/skinless chicken thighs
* 2 cans chicken broth
* 3 bay leaves
* 1 large piece ginger, peeled and smashed
* 2 cloves garlic, minced
* 1 teaspoon oil
* 1 teaspoon garlic salt
* 1/4 teaspoon pepper
* 1 tablespoon cornstarch

Cut chicken into bite-size pieces.

Cook chicken in large pot with heated oil on medium-high heat.

Add bay leaves, ginger and garlic. Once chicken is cooked/browned, remove bay leaves.

Add cooked luau leaves, chicken broth and season.

Mix cornstarch in a small dish with a tablespoon or two of water. Add cornstarch mixture to thicken the stew.
