Anuhea Stops In To Rock The Kitchen

I was lucky enough to meet Anuhea when she first started her singing career on Maui. Beautiful, sweet vocals and the ability to play the guitar — she had me the first time I heard her. Since then, she has graced the stage with celebrities including Jack Johnson and SOJA, and has been making a real commotion in the music industry. Because of her busy touring schedule, it took three seasons to finally get her in the kitchen with us. In honor of her first job at Mama’s Fish House, she made us her version of beef poke in a papaya — very ono!

* 1 Roma tomato

* 1/4 onion, chopped

* 1 handful cilantro, roughly chopped

* juice from 2 limes

* 1/4 teaspoon Hawaiian salt

* dash pepper

* 1 papaya, halved

* 1 tablespoon cooking oil

Seed papaya and set aside. Cut steak into cubes, chop tomatoes, chop onions and roughly chop cilantro. Heat sauté pan with oil until pan is really hot. Sear steak in hot oil; add onions, tomatoes and cook briefly. Be sure not to overcook.

Remove from heat, add seasonings, cilantro and lime juice. Spoon mixture into papaya halves and serve.
