Tasty Island Pork Brings Back Memories

This week’s Cooking Hawaiian Style guest from Shinsato hog farms brought me back to growing up on the island of Lanai.

Glenn Shinsato showed us how organic farm-raised pork can be clean, healthy and tasty.

Growing up on a plantation, I was reminded of how we used to eat.

He has been doing a great job educating the community and sharing the importance of buying local and preserving local farms.

Glenn and his friends made us their famous home-cured pork patty burger.

I recommend pairing this with a cold Angry Orchard crisp apple cider beer.

GLENN SHINSATO’S HOME-CURED PORK PATTY BURGER

* 1 pound ground pork
* 1 1/2 teaspoons Morton’s Tender Quick
* 1 tablespoon sugar
* 1 clove garlic, finely minced

Mix ground pork with seasoning and salt; form patties.

Fry patties in pan on medium-high heat for 10 minutes.

Remove patties from frying pan and fry an egg(s) in the same pan, preferably sunny side up.

While egg is frying, assemble burger with your favorite condiments, lettuce, tomato and bun, and top with the egg.
