Celebrate Father’s Day 2012 “Italian style” at award-winning Romano’s Macaroni Grill, located at Ho’okipa Terrace in Ala Moana Center.

General manager and “dad” Kunani Blake and executive chef Mike Longworth look forward to welcoming dads and their families. All dads will receive a gift from the restaurant and may enter to win “A Day Fore Dad” – dinner for four at Romano’s Macaroni Grill and a round of golf for four.

Dad will be able to enjoy scrumptious menu entrees including the popular Pasta Di Mare, Lobster Ravioli, Fettucine Alfredo and Lasagna Al Forno. Dessert is a must! Selections include its famous Tiramisu and Chocolate Cake.

As a departure from my usual “healthy” fare, tiramisu is a special favorite of mine, and I firmly believe that for special occasions you have to go off your diet in moderation.

I have asked Chef Mike if he would share his mouth-watering tiramisu with MidWeek readers, so here it is! Buon appetito!

TIRAMISU WITH KOLOA RUM

* 40 lady fingers
* 8 egg yolks
* 6 ounces sugar
* 24 ounces mascarpone cheese
* 8 ounces whipped cream
* 2 cups brewed espresso (can substitute a strong coffee)
* 2 ounces Koloa Rum
* 2 ounces cocoa powder

Whip egg yolks and sugar. Add mascarpone and mix until well incorporated. Fold in whipped cream. In a bowl, mix espresso and rum. Dip lady fingers into mixture and place in a single layer on a 14-by-10-inch pan. Cover with half the mascarpone mix. Dip remaining lady fingers and add to pan. Cover with the remaining mascarpone mix. Dust with cocoa powder and refrigerate two hours.
