Cooking Up Poi Stew With Melveen

Molokai tita Melveen Leed graced our kitchen with her spunky sense of humor and aloha. I learned a lot in her short visit. She taught us that she loves to throw net on the shores of Molokai and has a special trick to remove poi from a bag without getting your hands sticky. You will just have to watch the show for that trick! For now, we share one of her favorites that is now one of my favorites, Chicken Poi Stew. You don’t like poi? Try it this way. I know you will love it!

Make sure you have some pickled onion on hot rice on the side!

MELVEEN LEED’S CHICKEN POI STEW

* 1 whole chicken, cut into pieces

* 1 teaspoon olive oil

* 1 round onion

* 2 stalks celery

* 1 chicken bouillon cube

* salt and pepper, to taste

* 1 bag poi

* chopped green onions

Cut chicken into cubes.

Slice green onion stems and celery thinly and set aside. Heat pan with oil, then add chicken, celery and green onion stems. Cook for 3-4 minutes. Add 4-5 cups of water and bring to a boil. Add bouillon cube, salt and pepper, to taste. Thicken with poi, to your preference.
