             Cooking To Get In The Zone

Poet and I are often asked how we settled on Eat Pono as the title of our book. For us, Eat Pono is so much more than a cookbook, it is a way of living. We wanted to find a title that would invoke the principles of our mission, which is to provide educational and engaging opportunities for our keiki to source local, eat nu- tritiously and live sustainably. It was important to find a title that captured the essence of living a life in balance, and thus we land- ed on Eat Pono.
SOUTHWEST STUFFED YAMS
Ingredients: • 4 yams
• 1 can cooked black beans (drained) • 1 can sweet corn kernels (drained) • 1/2 cup chopped broccoli
• 1/4 cup shredded Parmesan cheese • 1 cup mango peach salsa,
on the side (optional)
• 1 tablespoon grapeseed oil
Directions:
Rub yams with grapeseed oil, wrap in tinfoil and then bake in oven for 1 hour at 400 degrees or until fork tender. If pressed for time, you can wrap yams in a wet paper towel and cook in microwave for about 10 minutes until tender.
Remove from oven or microwave and let cool for
a few minutes, then slice down the middle and pinch the top slit open. Mix remaining ingredients together and stuff baked yams with mixture. Then, sprinkle with cheese and broil for 5 minutes.
Serve with mango peach salsa on the side.
