            A Healthy, Nutritious Start To The Day
   Anew year means a fresh start! I invite you to join Poet, now 10 years old, and me as we take you on a journey of sim- ple and healthy food choices as seen through the eyes of a child.
PANCAKES PLEASE!
Ingredients:
• 1/3 cup old-fashioned oats, blend oats in
blender for 30 seconds on high until ground to flour consistency
• 1 very ripe banana, peeled • 2 eggs
• 1 teaspoon vanilla extract • 1 teaspoon cinnamon
• organic maple syrup or local honey, optional
• 1/2 teaspoon each of chia seeds and flax seeds, optional
Directions:
Once you have made the oat flour, combine it with banana, eggs, vanilla extract and cinnamon in a mixer. Mix on medium for 30 seconds or until combined.
Heat pan over medium heat and coat with avocado oil spray. Pour pancake batter and cook like regular pancakes until golden.
Top with fresh berries, organic maple syrup or local honey, and any other ingredients like chia seeds or flax seeds.
