Ingredients for fish tacos:
• 1 small, fresh pāpio (or whatever fish you can
source)
• 1 tablespoon salt
• 6 small taco tortillas
• 1 tablespoon chile powder
• 1/3 tablespoon ‘ōlena (turmeric)
• 1/3 tablespoon paprika
• 1/3 tablespoon cumin
• 1/4 tablespoon pepper
• 1/4 cup olive oil
• 1 garlic clove, chopped
• 1/4 cup cilantro, chopped
• 1 lime
Add all dry ingredients into a bowl and mix. Clean and
debone fish. Cut fish into small pieces and place into a mixing bowl. Season fish by sprinkling in dry ingredients
mixture and thoroughly coating fish. In a pan, heat half of the olive oil and all the garlic. Add cut fish and sear. In separate pan, heat the remainder of the oil and warm up tortillas in pan.
Ingredients for slaw:
• 16-ounce coleslaw package
• 8 ounces kale, chopped small
• 1/4 cup Maui onion ranch dressing (or dressing
of your liking)
Add coleslaw, kale and dressing in a bowl and mix
thoroughly.
Plating:
Place heated tortilla on plate and add a heaping scoop of slaw on top. Add seared fish atop slaw. Cut and squeeze lime juice atop fish. Add chopped cilantro.
