Ingredients for biscuit:
• 2 cups flour
• 1 tablespoon baking powder • 1/4 cup sugar
• 1 stick butter, diced small and frozen
• 1 1/4 heavy whipping cream
Ingredients for strawberries: • 16 ounces Kula Country Farms strawberries
• 1/4 cup sugar
Ingredients for whipped cream:
• 1 cup heavy whipping cream • 1/4 cup sugar
Directions:
Macerate strawberries. Wash, hull, slice and sprinkle strawberries with 1/4 cup sugar, or to taste.
Set aside for 30 minutes. Preheat oven to 450 degrees.
To prepare dough, combine flour,
baking powder and sugar in a food processor or blender. Dice frozen butter and add half at a time. Pulse until it has a sandy texture.
Add heavy whipping cream gradu- ally, and pulse until ingredients begin to stick together.
Turn out dough onto a lightly floured wax or parchment paper. Using your hands, fold it a couple of times so it becomes a mass that can be rolled out evenly.
Roll out with pin to 1-inch thick- ness, cut with 2 1/2-inch biscuit cut- ter. Gather scraps, pat down and cut out more biscuits. Place on 9-by-13- inch baking pan or cookie sheet.
In the preheated oven, bake at 450 until golden brown (about 13 minutes).
To prepare whipped cream, in a bowl whip heavy cream with electric mixer at high speed. When the cream doubles in volume, add sugar and con-
tinue to whip until stiff peaks form. Serve warm biscuit with Kula
Country Farms strawberries and a dollop of whipped cream.
Serves 9-10.
