ost know Ian Walsh for his surfing skills and giving heart, but the Maui native has another venture that’s taking off. He now has a YouTube channel, where he shares recipes and cooks
for viewers. I was excited to have him in the kitchen because I am such a fan of his surfing, as well as his community service, which includes a surf contest he holds for keiki on the Valley Isle. His Menehune Mayhem surf event showcases the young new surfers and also rewards them for academics in school. Ian was a valedictorian in high school and knows the importance of making the grade.

Ingredients:
• 4 brioche burger buns
• 1 pound ground beef
• 4 slices American cheese
• 8 slices butter lettuce
• 1/2 tomato, sliced thick
• 1/2 Maui onion, sliced
• ketchup, mustard, pepper, coarse kosher salt, to taste • oil, to coat pan
Directions:
Heat cast-iron skillet on stove. Put dab of oil on napkin and rub into skillet. Mix ground beef into 2-ounce balls. Wrap pot with aluminum foil to cover bottom.
Place one ball on hot skillet and smash down with pot, keeping pressure with your hand on pot (use a towel, if necessary) for 1-2 minutes. Sprinkle with salt and pepper. Flip burger and smash again with pot, and cook for about 30 seconds longer.
Place slice of cheese on burger and set aside. Clean pan between cooking with paper towel. Repeat the same for next beef ball, and place second cooked burger on top of cheese of the first one. Keep patties somewhere enclosed to keep warm while you finish cooking.
When all burgers are done, clean pan and toast buns on heated skillet. Then, build your burger with butter lettuce, tomato, Maui onion, ketchup and mustard.
Serves 4.
