his week, multitalented singer-songwriter Josh Tatofi whips up a family favorite. The Baldwin High School grad has music in his
blood, having grown up in the Kapena lineage (his dad, Tivani Tatofi, was one-third of the local su- pergroup).
Josh has been playing music since the age of 8. His first recording was with another Maui group, ‘Ekolu. Still only 30 years old, this talented guy has a long career ahead of him. We’re glad to have him sharing his culinary talents and cooking Lū Pulu.

• 1 onion
• 1 can coconut milk
• 1 can Palm corned beef • mayonnaise
• foil, to wrap
Cut stems off taro leaves. Slice onion.

Stack together three taro leaves and place half a can of Palm corned beef into middle of leaves.
Add onions to taste. Top with a heaping spoonful of mayonnaise.
Pour half a can of coconut milk on leaves. Wrap leaves from left to right, bottom to top. Then, wrap with foil.
Steam for 75-90 minutes to fully cook taro leaves.
