This Salad Says Aloha With Each Bite

Olena Heu and I have been friends for a long time, having met while working at the radio station. I had just started as a DJ on Island 98.5 and she was doing promotions with our sister station. She has this great smile and outgoing personality everyone loves. Originally from Kauai, she and I connected with our “country” living mentality. The former Miss Hawaii and KHON2 anchor now runs her own business, Olena Heu Communications.

OLENA HEU’S BOMBUCHA SALAD WITH SEARED POKE AND LILIKOI VINAIGRETTE

For Salad:

• 1 head romaine lettuce
• 1 tomato, sliced
• 1 cucumber, sliced
• 1/2 package fresh mushrooms, sliced
• 1 each red and yellow bell pepper, slivered
• 4 sprigs cilantro
• 1 stalk celery, sliced
goat cheese chevre
wonton chips (optional)
cashews or macadamia nuts (optional)

Cut all vegetables for salad and place in bowl. Add seared poke on top of salad and garnish, as you prefer, with nuts, wonton chips, cheese, etc.

For Lilikoi Vinaigrette:

• 1/2 cup Aunty Lilikoi Unsweetened Passion Fruit Juice
• 1 cup rice wine vinegar
• 1 cup extra virgin olive oil
• 2 tablespoons Hawaiian honey
• pinch salt
pepper
• 1 Hawaiian chili pepper

Add all ingredients to blender and blend well. Chill until ready to use.

For Seared Poke:

• 1/2 pound ahi, cubed
• 1 package Noh poke seasoning
• 1 tablespoon sesame oil

Prepare poke mix by soaking ogo in water as instructed. Cut ahi into 1-inch cubes, mix ingredients, heat skillet and flash-fry poke for 1-2 minutes.
