Tasty Macadamia Nut Crepes With Malika

Former KGMB9 meteorologist and former Miss Hawaii Malika Dudley has many talents. Malika is one of my best friends, and I knew if we could get her in the kitchen, it would be good fun! And fun it was, cooking one of her favorites that her mom taught her, Island Princess Hawaii Macadamia Nut Crepes. When she is not being a mom or making her Surfer Girl Jewelry, you can find Malika in the ocean.

MALIKA DUDLEY’S ISLAND PRINCESS HAWAII MACADAMIA NUT CREPES

* 1 cup flour
* 1/2 cup sugar
* 3 eggs
* 2 tablespoons oil
* 1 teaspoon vanilla
* 1 1/2 cups milk
* couple splashes beer (if you want)
* 1 stick butter
* Fillings: Island Princess Hawaii macadamia nuts, whipping cream, yogurt, fresh fruit, preserves — whatever you prefer

Mix ingredients (except butter) together. Whisk until smooth; let rest at room temperature, covered with a dish towel.

Get crepe pan really hot (don’t be afraid if it starts smoking). Use the stick of butter to butter the pan. (Keep it handy, as it’s used for each crepe.) I usually take the pan off the heat to do this.

Use a soup ladle to pour crepe batter into pan. You want enough batter to cover the pan, but not too thick. Figure out how far up in the ladle is the perfect amount of batter for your pan and repeat. (This may take a few tries, and you almost always ruin your first crepe. Don’t worry, it still tastes good!)

Flip crepes once you see bubbles and/or the crepes are just cooked enough to flip.

Remove when golden brown and add fillings of your choice. Voila!
