A Sandwich Perfect With A Cup Of Tea

Did you know that after water, tea is the most widely consumed beverage in the world? Darlene Pahed, owner of A Cup of Tea in Kailua, learned this on a fact-finding trip to tearooms all over the world before opening her charming Victorian tea-room and boutique.

After joining the U.S. Tea Association and attending a worldwide expo, Darlene was able to enroll in its Tea University, which offered her the opportunity to meet with the best people in the tea industry while also educating herself. After attending classes Level I and II, Darlene now has the distinction of being the only certified tea pourer in this category on Oahu.

A quote by Henry James – “There are few hours in life more agreeable than the hour dedicated to the ceremony known as afternoon tea.” – is the inspiration for A Cup of Tea’s daily mission, which is to duplicate this ceremony in the ambience and décor of the era in which James lived. The shop’s selection of more than 30 teas are freshly steeped in a professional air-filtration system, and scones, baked treats, soups, salads and finger sandwiches are freshly prepared and baked daily by the in-house specialty chef.

A Cup of Tea also has the flexibility of a private room to celebrate weddings and all kinds of parties, and it offers special Valentine’s Day and holiday menus.

Darlene is the proud grandmother of Nysja Barrientes, 14 (born in Hawaii and now living in Las Vegas), who will travel with the USA Boxing Association on the Junior Olympic national traveling team this year. Nysja’s goal is to qualify for the 2016 Summer Olympics in Brazil.

EGG WITH DILL SANDWICHES

* 6 boiled eggs, chopped
* 1 teaspoon dill
* salt, to taste
* 1/2 cup mayonnaise, may use light mayo

Mix together and let chill for two hours. Use on white/wheat bread or wraps.
