A Cool, Refreshing Summertime Salad

It’s a great girls’ day out Sept. 7-9 at the 10th annual Hawaii Woman Expo at Neal S. Blaisdell Center Exhibition Hall, with more than 200 vendors selling jewelry, cosmetics, crafts, quilts, home decor, food and many more products and services. There will be fashion shows and live entertainment all weekend.

Highlights include Amy Hanaiali’i, who’s debuting her new album My Father’s Granddaughter; Hawaii’s Most Beautiful Man Contest; and a fashion show of celebrities and their pets in support of Oahu SPCA. Admission costs $3, and military members and their families in addition to children under age 7 are welcome to attend for free.

This column is dedicated to Pat Shine, producer of Hawaii Woman Expo, who created it 10 years ago with the intention to provide women of our state with their very own consumer trade show. He describes this as “an event of spirit, wellness and style.” The show’s slogan is “It’s A Great Girls Day Out!”

For a cool dinner or lunch in the hot summer months, this salad fills the bill. Serve with a sliced fresh baguette or some crusty rolls.

WIKI WIKI TURKEY, TOMATO AND GRAPE SALAD

* 3 cups cubed, cooked turkey breast ( you can buy turkey breast in thick slices at a deli counter and cube)

* 1 small can water chestnuts, drained

* 1 cup halved seedless black grapes

* 1 cup assorted tiny tomatoes (most supermarkets have local North Shore tomatoes already packaged this way)

* 1 tablespoon finely chopped fresh chives

* 1 teaspoon dried parsley

* 1 teaspoon garlic powder

* salt and pepper, to taste

* 1/4 to 1/3 cup light or nonfat mayonnaise

Lightly toss turkey with grapes, tomatoes and water chestnuts until combined. Combine desired amount of mayonnaise with herbs and spices until well-mixed. Fold in mayonnaise mixture with turkey mixture, adding more mayonnaise or spices to taste, if desired, and chill for at least two hours for best flavor.

Makes six servings.
