An Eggs-tra Easy Gluten-free Quiche

The folks at Volcano Village are especially grateful for being spared from the worst of Tropical Storm Iselle, but they want everyone to remember that Hawaii island is still open for business and needs your support to recover.

Volcano Village Lodge is located just a mile from Hawaii Volcanoes National Park and offers guests vegetarian, vegan and gluten-free snack options in their rooms each morning, prepared by general manager Kelsea Garlich.

Originally from Indianapolis, Kelsea first came to Hawaii in 1998 on a family vacation and fell in love with Hawaii island. She moved here immediately after graduation from Indiana University, having studied parks, recreation and tourism management while working at the Bloomington Convention and Visitor’s Bureau.

Before working at Volcano Village, Kelsea was an intern at Kilauea Military Camp in Hawaii Volcanoes National Park in the food and beverage department, and is an active volunteer in the area, working closely with Volcanoes National

Park and other smaller nonprofits to preserve the integrity of the Hawaii island environment.

Kelsea shares her gluten-free recipe here. It’s easy to prepare, will help you feel energized and satisfied, and can easily be converted to a vegetarian dish by omitting the meat. I have added options to cut fat and cholesterol, if desired.

Eggs can be a part of a healthy diet if eaten in moderation. One egg contains about 80 calories, about five grams of fat (1.6 grams saturated) and 187 milligrams of cholesterol, and the white is a high-quality protein source.

BREAKFAST QUICHE

* 10 eggs (may use egg substitute, egg whites or a combination of whole eggs and whites, using 2 egg whites for each whole egg)

* 1/4 cup milk (may use 1 or 2-percent milk)

* 1 small onion, diced

* 1/2 roll Portuguese sausage or 1/4 package bacon well-cooked, drained and chopped (For vegetarians, omit sausage/bacon)

* 2 cups chopped fresh broccoli

* 1/4 cup diced red bell pepper

* 1/4 cup chopped fresh or frozen spinach

* 1/3 cup feta cheese, or to personal taste

* salt and freshly cracked pepper, to taste

Preheat oven to 350 degrees. Grease bottom of round cake pan with cooking spray or butter.

Beat 10 eggs in mixing bowl and add milk. Add salt and pepper. Add spinach and mix well. Cook onions and bell pepper in skillet until just before browning. Steam broccoli in microwave or on stove until slightly tender.

Layer broccoli, onions and bell pepper, sausage and feta cheese in bottom of pan. Pour egg and spinach mixture over the veggies, sausage and cheese, and cook for approximately 40 minutes or until quiche is solid in the middle. Slice into six large or eight small slices.
