I had the chance to open for C&K a few times on the road doing stand-up comedy,and it has to be one of the highlights of my career. Henry Kapono, the K in C&K, is one of the most humble, down-to-earth entertainers Hawaii has.. His voice is soothing and distinctive, his cooking simply ono.

Here we go with one of his favorites Moon Over Opaka, a recipe given to him by the late John Moon.

MOON OVER OPAKA

• 1 medium-sized opakapaka
• 1/4 cup sesame oil
• 1/4 cup shoyu
• 1 piece ginger, chopped (about 1 tablespoon)
• 2 cloves garlic, chopped
• 1/4 cup chopped green onions
• 1/4 cup chopped cilantro
• salt and pepper, to taste

De-scale fish. Boil water in a pot large enough fit entire fish. Poach fish (head and all) in boiling water for 2-3 minutes. Place fish on serving platter.

Garnish fish with bean sprouts on the side, and top fish with green onions, cilantro and ginger.

Heat sesame oil in small pot. Pour heated sesame on fish and then shoyu.
